Hamburger Soup



Sticking pretty fair and true to my 2009 goals thus far, though it has only been three days so I can't really boast.

Tried a new recipe on the 2nd! Hamburger Soup, a recipe I got from Chubba Gurl blogger, Shweetpotato! Uber delicious!

I did tweak the recipe a bit to fit what I had on hand and what I forgot to pick up from the store. I used a cup of frozen veggies (pea, carrots, green beans) instead of the carrots and celery...and I used diced tomatoes instead of whole...just personal pref. Was very good - a definite add to our collection of things to make! Makes my mouth water now!

Yum!!! Kinda reminds me of goulash or chilimac. Looks really yummy!!!

Funny, Momma Val, I was going to say the same thing: looks like goulash. Mmmm. Stacy, did you end up using the crockpot? I got a crockpot for Christmas, too, and have never cooked with one before, so am looking for recipes and/or tips.

I have a crockpot lasagna recipe if you are interested. Also, I gave my friend a second hand crock pot and when I went tot he website to download the user's manual for her they had a ton of recipes on the website too. Just in case you are looking for recipes. They may even have some for your specific model??? :) Good luck!

Try this. You can thank me later. :) (I make a pot every Monday and eat it all week... I double the cook times though and put a slice of munster cheese in my bowl instead of parmesan.)

QUICK ITALIAN VEGETABLE SOUP

Ingredients (serves 6)

1 tablespoon olive oil
1 medium onion, chopped
2 carrots, sliced
2 stalks celery, sliced
1 (16 ounce) can diced plum tomatoes
2 teaspoons Italian seasoning
2 cubes beef bouillon
6 cups water
2 zucchinis, quartered and sliced
2 cups sliced cabbage
1 teaspoon garlic salt
salt and ground black pepper to taste
freshly grated Parmesan cheese (optional)
Directions

Heat oil in a large stock pot over medium-high heat. Saute onion, carrot, and celery until onion is translucent and vegetables are tender, 5 to 7 minutes. Stir in tomatoes and Italian seasoning, and cook 5 minutes more, stirring frequently.
Dissolve bouillon cubes in water, and stir into vegetables. Adjust heat to a medium simmer, and cook approximately 10 minutes. Add zucchini and cabbage, sprinkle with garlic salt, and cook until tender, 5 minutes more. Adjust seasoning with salt and pepper, and serve

Momma Val - I made so much - but it's almost gone! Definitely soup season in our house right now!

BerryBird - I did use the crockpot. I cooked it on high for about 3-5 hours, not exactly sure on the time because I know I put in before Matt and I traipsed through the mall - but the meat was already browned so I was horribly worried about how long it was in there. It was boiling when we got back.

Momma Val - Will def. have to try that lasagna recipe soon - sounds delicious - gotta get out of my soup craving first tho, LOL! I don't know if my crock came with recipes, I will have to get the box and look now! :)
